Harvest time

At Pinino the harvest usually takes place during the first half of October and it’s done entirely by hand. The grapes are collected in 10 kg boxes to ensure that the fruits are handled with the greatest care and remain intact throughout transportation to the cellar. The grapes selection begins in the rows: only those with optimal ripeness are selected for vinification. This careful manual selection allows us to avoid damaged or flawed berries, making sure that only the best ones get to the cellar, thus guaranteeing an extreme quality and high aroma concentration, essential for the creation of our wines.

Winemaking and Aging

The must ferments in temperature-controlled steel vats. The wine then undergoes an on-skin maceration period that can last up to 25 days in order to guarantee the greatest extraction of aromas and structure. To intensify the wines complexity and refinement, aging takes place in oak barrels and barriques, for a period that goeas from 30 to 36 months, depending on the typology.
